Fish with white trim Duxelles
This cozy family recipe consists of white fish, sweet, crumbly texture, vegetable and canola oil good for the heart. For dinner this week, nothing better than this nutritious and tasty dish!

INGREDIENTS
1 package (8 oz/250 g) fresh mushrooms 1
1 shallot, cut one end
4 green onions, chopped fine 4
2 c. tbsp fresh parsley, finely chopped 30 mL
1 c. teaspoon fresh thyme, finely chopped 5 mL
1/4 c. teaspoon salt 1 mL
1/4 c. tsp pepper 1 mL
3/4 cup dry bread crumbs 175 mL
2 c. tablespoons of canola oil 30 mL
1 can (14oz/398 mL) crushed tomatoes 1
1 c. tbsp balsamic vinegar 15 mL
1 1/2 lb white fish 750g
INSTRUCTIONS
1. Preheat oven to 400 º F (200 º C).
2. In a food processor, chop the mushrooms until finely chopped. In a large skillet, cook the mushrooms over medium heat for about 5 minutes, until the moisture has dissipated and the mushrooms are lightly browned.
3. Remove from heat and add the shallot, green onions, parsley, thyme, salt, pepper, breadcrumbs and canola oil. Mix well. Put the mixture Duxelles aside.
4. Spread the crushed tomatoes in a baking dish 9-inch. x 13 inches. (22 cm x 33 cm), lightly coated with oil. Add the balsamic vinegar and mix. Place the fish fillets on tomatoes. Place the mixture over the fish Duxelles covering many nets.
5. Bake for 15-20 minutes until the fish flakes easily with a fork and mushrooms are lightly browned.
